I also intentionally make the holes smaller so they fill in when baked. They’re better for sandwiches. You maybe made the holes a little too small haha… I usually make mine about 2.5-3 fingers wide and they expand during boiling/baking.

First time I made them that’s how mine looked (a little rougher than yours, honestly, but just as round!). I would make sure if you’re proofing overnight to let the dough come up to room temp first, and stretch the whole out a bit more if you’re looking for the traditional shape. I’m by no means an expert, so your results may vary. Regardless, these look great!

The hole in the middle of the bagel allows it to have a larger surface area, making it easier to consistently cook the bagel all the way through. This is important because bagel dough can be incredibly thick, which would make it difficult to know if the center was cooked completely if the hole was not there.

I’ve only seen bagels shaped, and it’s been strands, connected at the ends and rolled at the joining seam. These look like they were shaped like I shape a sourdough couronne, by poking a hole in a pre shaped boule. I’m not saying bagels are only shaped the first way, but that’s the only way I have seen, and could be why the centers closed up.

It’s technique. Bagels are rolled and joined, not poked. Rolling changes the structure of the dough and makes it more organised, like the difference between forging and casting. If you wish, you can roll them tight so they end up with closed holes after proving.
Roll out (say) a 120g relaxed dough ball into a sausage long enough to wrap around your palm with about 5cm (2”) overlap. Press the join against the bench, and roll to similar diameter to the rest of the bagel.
The rolling gives it the bagel texture (inside), the gluten strands align like grain in wood, making a stronger, chewier product than you can make by piercing a ball, where the “grain” runs every which way like a bread roll
