Well done mate, that was a cracking good watch. Occy always has me puzzled, bit like Abalone, everyone knows how to make it tender – but no one has made it tender 100% of the time repeatedly LOL! I actually gave up on occy and just started eating it and giving away all the witch craft and shaman voodoo as I could never reproduce the same result time after time. I love the taste. But I found it was always the same whether I froze it, Pressure cooked it, Beat it, soaked it in milk, kept it in the fridge for 48hrs, minced it, skin off, skin on, variations of all of the preceding, so on and so forth. I finally worked out that it was just quicker to cut it up and cook it and eat it after a good salt water wash off. I'm looking forward to giving this a go as well. I've pickled the Occy without cooking it and it came up awesome. I'm looking forward to trying this as well. Quick question, why do you simmer the Vinegar and water mix before adding it to the jars? Is it just to heat it so when the lid goes on and the mix cools it creates a vacuum seal or is there something else going on I have missed? Hey mate lunch the cook up. Just wondering, I catch a fair few squid down in South Australia and want to start pickling a heap. Would ya boil the squid like ya did with the occy? And if so what sort of time? 30mins?
