My first try at bagels ever, using my sourdough starter. I think they needed more time to rest after shaping. Next time!

You tried and you learned. That’s a win in my books. I’ve had many bread disasters and even when it doesn’t look pretty it still tastes good with some butter and cheese.

How long did you boil them for? If you boil for much longer than about 30 seconds/side they’ll deflate like this. Great first attempt, I just think it looks like a boil issue more than an inadequate second rise.

I bet you are closer to success than you might feel or think. But maybe try a hybrid dough (a little yeast plus some levain) before going for the full sourdough version? Instant yeast is a great tool. 👍🏻 Martin

I’m going to guess they collapsed when you were removing them from the pan for the boil. I had that happen to me once, forgot to use a nonstick spray on the pan. The proofed bagels stuck and I couldn’t release them without deflating them.

I thought the closest ones were onion rings.
