Whether you are feeling peckish or craving something sweet after a meal these single serve cookies will serve the purpose! Whip them up quickly for a child’s snack or your own. Content creator and recipe developer Kriti Dhiman shares the easy recipe for the forever favourite – Red Velvet Cookies.

Single Serve 2-Minute Red Velvet Cookies
Pre time: 5 minutes
Cooking time: 2 minutes
Makes:  2 cookies

Ingredients
3 tbsp salted butter
1 tbsp brown sugar
1 tbsp castor sugar
2 tbsp maida
1/2 tsp cocoa powder
1 tbsp milk
A pinch of baking soda
10-12 white chocolate chips
1-2 drops red food colour, gel
1 drop of vanilla essence

Method


Mix the softened salted butter, brown sugar, castor sugar and vanilla essence in a bowl until the sugar dissolves.
Now add in the maida, cocoa powder, milk, red food colour and the baking soda.
Bring this together to form a dough. Add in white chocolate chips and scoop the dough in two separate portions on parchment paper. Keep some distance between the two scoops. Top them with some more chocolate chips.
Microwave it for 80 seconds, the cookies will double in size and become crunchy. Allow to cool for a couple of minutes and enjoy!
