Picked these up a couple days after New Years. I know the stick says choice, the cryovac says Prime and the butcher made sure to have me grab the prime ones mixed in with the choice ones.

good looking steaks. What are you doing with the sous vide? With a tenderloin I just give it 30 minutes at 120

Aw man. Next time you see something like that at GEagle let me know? My teenager wants to try to make beef Wellington for his birthday. I need a tenderloin sale right now. 😂

WTF!!!!! If you buy a whole tenderloin, why would you cut it in mignon before cooking? Trim it, use butcher’s rope to attach the top to the thin end, then cook the filet as a whole! Cut into parts after.

And this is why it’s good to cultivate a relationship with your Butcher.
I hope you have that person on your Christmas Card list, OP.
$1 more per pound than lean ground chuck at the store the other day. They did have 3 inch thick prime rib tomahawks with about a 3 foot long rib, on sale for $14 / pound.

Wait – the plastic wrapper says prime but the paper label says choice. Something fishy going on

Good deal – but can I be glad that they’re putting a Wegmans in up in Cranberry to challenge them? GE’s pricing is way out of hand…and their pushing of their generic “market district” crap has as well.

So only 1 in 10 angus cattle qualify for Certified Angus Beef Prime. Thats top tier stuff! Source: me, CAB specialist for Sysco Foods in NC! Great find!!!!

I haven’t done much with full tenderloin before. Curious what the plan is for the smaller chunks or the trimmings off to the side.
