Fried Pan De Cristal (100% hydration )Recipe
Ingredients
– 250-gram bread flour
– 250-gram water
– 3/8 tsp instant yeast
– 1 tsp salt
– Olive oil for the pan
– Oil for frying
Methods
1. Mix bread flour, instant yeast, salt, and water with a spatula until well combined and no dry spots. Pour the mixed dough into a well-oiled 9-inch square pan, cover with plastic, and let it rest for 20-30 minutes.
2. Fold the dough with wet hands, grab and pull it from one side corner to the other/ opposite corner, do it about 4 times.
3. Do coil fold, using wet hands, grab under the middle part of the dough, lift up, and release the dough from the dish. Allow the dough to fold over itself. Turn the dish
90 º and repeat the same process. You can repeat this process 1 more time if the dough still feels loose. Cover with plastic and set aside for 20 minutes. Repeat this process 3 more times with 20 minutes of rest between the processes.
4. After the 4th time doing coil fold, let the dough rest for 80 minutes. In the meantime, prepare to cut about 8 pieces of parchment paper, size about 7 inches x 5 inches.
5. After 80 minutes, sprinkle generously with flour every nook and cranny evenly on the surface of the dough. Then, carefully flip the dough onto the counter/ board, and remove the pan off the dough. Sprinkle again generously with flour every nook and cranny evenly so it won’t stick to the parchment paper. Using a bench knife, cut the dough into 8 pieces and put every piece of dough on prepared parchment paper. Ensure the flour is sprinkled generously, otherwise, the dough will stick to the parchment paper. Let them rest for about 2 hours, uncover.
6. Preheat enough oil for deep frying in the pan for 350º F. Lift the dough with the parchment paper under it, flip carefully to the hot oil, and then release the paper. Fry the dough until it is brown. Take it off the hot oil and put it on the rack allowing the fried bread to cool down. Enjoy the fried breads while they are still warm.
