Seasoned with Meat Church fajita rub, no binder. 225 until the internal hit 125 (almost exactly one hour), then seared on both sides in a ripping hot cast iron pan for 2 minutes per side on the stove. Rested for 20 minutes.
Not the best texture in the chimichurri, so I’ll make sure to mince it better next time. Easy and traditional: Parsley, onion, garlic, salt, black pepper, red pepper flakes, oregano, and olive oil.
