I'm lazy. When I reach for a knife, it's more like a zombie extending his hand in an attempt to grasp his next meal. I don't want to hold my hand higher than it needs to be when taking my (often long) time to select which knife to use. If you cook using wine like I do, it's less risky to reach out towards a handle than a sharp tip. Also, there's usually a wire rack that fits perfectly around this mount, so taking it downward is easiest.

Having the honing rod handle downward, right next to the tip of another blade is questionable
“tips up” and yet the last tool has their handle up next to a blade
Been cooking 20 years, have all my fingers.
Here you can almost slide the knife down to your side. Otherwise you are lifting up and over the other blades.

I’m usually FOH but when I did have a kitchen position I liked them up. I’m >5’0 and it was just over my head/forehead. Seems safer imo
My decent lies with the use of “s” bolts. I conserve space at home and def not a busy kitchen. Like 3 rubber spoons, measuring spoons, a whisk, 2 tongs … I find I move slow anyways, so why not flip them the other way? ease of access to some of the small yet incredibly useful things together? While separating the sharp things from the non sharp things.

Made one and it’s a game changer. Lives in the knife roll and has wire hangers so I can set it up easily.
