Really simple recipe.
Ingredients
- 800g shrimp, shelled and butterflied
- 500g spaghetti
- 1 bunch of broccolini, diced
- 1 bunch basil
- 3 cloves garlic
- 2 tbsp olive oil
- 1 large red chili, split, seeded and diced
- zest from 1/2 a lemon
- about 2 tbsp butter
Method
- boil the shells in 2 cups of water for 20 minutes. Drain, set aside. Discard the shells.
- sauté the garlic, chili, and lemon zest in olive oil over medium heat
- just before the garlic browns add the shell stock and continue to reduce. Add a few pinches of kosher salt.
- start boiling the pasta
- just before the pasta is al dente start sautéing the shrimp and broccolini. Add in the butter.
- add in the chopped basil and then immediately add the pasta directly into the sauce pan
- toss vigorously until the sauce is creamy
Serve immediately! Add parm if you must but it’s really not needed.

This seems like a fake AI thing. The photo does not look at all like what the recipe “tries” to describe, that being a well emulsified and coherent sauce. Looks more like some strangely cut shrimp/prawns geometrically placed on the plate with a staggeringly low amount of “broccolini” and some incoherent “red” that being the “chili” placed on top of some very dry looking pasta.
