Recipe:
1 seedless orange (unpeeled and preferably organic)
250 g flour (2 cups)
3 eggs
200 g sugar (1 cup)
16 g baking powder
90 ml vegetable oil (like sunflower oil) (1/3 cup + 1 tbsp)
60 ml milk (regular or plant based) (1/4 cup)
1 tsp vanilla extract
Steps:
1. Preheat your oven to 350ยฐF (180ยฐC). Grease and cover in parchment paper a 7 inch (18 cm) cake pan.
2. Pick a type of orange that has a thin zest like navel oranges. Wash the whole orange thoroughly, remove the extremities at the top and the bottom where the zest tends to be a bit hard. Cut it into pieces and place the orange in the blender.
3. To the blender, add sugar, vegetable oil, milk, and eggs.
4. Blend the ingredients until you achieve a smooth, orange-infused mixture and then sift in the powders (flour and baking powder). Blend for a short amount of time to quickly incorporate the powders without over mixing too much.
5. Pour the batter into the prepared cake pan.
6. Bake in the preheated oven for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the cake to cool in the pan for 10 minutes, then decorate it with icing sugar. Slice, serve, and savor the citrusy goodness!

The pith in the orange peels will make your cake bitter
We don't easily get oranges here without antifungal wax/pesticides coating them ๐ข
I definitely want to try this!
