Harira soup
1 onion grated
2 large tomatoes grated
1 stalk of celery chopped finely
1 bunch of cilantro chopped finely
1/4 cup brown lentils
1/4 cup vermicelli noodles
1/2 cup of tomato sauce
2 Tbsp olive oil
1 tsp of cinnamon
1 1/2 tsp of ginger
1 tsp of turmeric
1/2 tsp black pepper
salt to taste
8 cups of water
Flour slurry to thicken soup
1/2 cup of flour
1 cup of water
Grate onion and tomatoes and add to the pot with the chopped celery and cilantro. add the lentils to the pot along with 2 Tbsp of olive oil. Sauté until the tomatoes start to form a sauce. Add in the water and cook for 25-30 minutes.
When the lentils are cooked add the chickpeas, vermicelli, and tomato sauce and cook for 10 minutes.
Make a flour slurry of 1 cup of water and 1/2 cup of flour mix well and slowly drizzle into soup while stirring. Cook on medium heat for another 10 minutes to cook flour thoroughly.
Serve with lemon wedges, dates and boiled eggs!
