High Protein Prosciutto wrapped Chicken Saltimbocca:
for meat quantity equivalent to 4 chicken thighs:

Prosciutto wrapped Chicken Saltimbocca:
4 chicken thighs cooked in crock pot, cooled
4 slices of prosciutto
a few twigs of fresh or dried sage
1/2 cup sliced mushrooms
1 cup sliced zucchini
dash of salt
dash pepper
dash of garlic powder
optional: dash of 21 season salute (trader joes)
dash of white wine or sherry or NON-ALCOHOLIC TRICK: smaller dash of balsamic or red wine vinegar

1. debone chicken thighs and remove skin if desired; save some of the juice from the crock pot to use as a base for sautéing the saltimbocca (we used thighs with skin on and with 12 hr. crock pot cooking it’s very tender and adds natural collagen boost!)
2. Add ~ 1-2 tbs chicken fat/juice from crock pot to pan with ~ 1 tbs olive oil and heat on medium
Wrap each thigh meat in a slice of prosciutto and slip a few leaves of sage under the wrap
3. Place prosciutto wrapped thighs in the hot pan; sprinkle seasonings and wine or vinegar onto evenly and then evenly spread mushrooms and diced zucchini on top; add a little extra sprinkle of salt on the veggies, Place lid on and wait about 10 min or until the prosciutto starts to shrink around the chicken and look like bacon.
4. That’s it – one pot meal that looks and tastes fancy, plate and serve!
