Mushroom “Risotto” (Italians – please don’t hate me)

Ingredients for 2 serves (cannot fit more than that in a single pan — this photo does not do how much food there really is in the bowl justice!).

400g cauliflower rice
200g sliced mushrooms
112g protein rice
Packet of powdered cream of mushroom soup
1 tsp minced garlic
Garlic powder
Onion powder
1 tsp dried thyme
Juice from 1/4 lemon (or more to taste – plus more for a wedge)
1 tsp Tamari (or soy sauce)
30g spinach (optional – included in macros)
Parsley (optional – included in macros)
Chilli flakes (optional – included in macros)

Steps:
1. Boil protein rice per package instructions. Drain and set aside.
2. Prepare soup in 250ml boiling water. Set aside.
3. Cook sliced mushroom in a pan (no oil needed) until water releases, then add minced garlic and thyme. Cook until fragrant.
4. Add cauli rice, prepared soup, prepared protein rice, onion powder, garlic powder, tamari, spinach, juice from lemon, and parsley (reserve some for garnish). Add chilli flakes if using.
5. Cook until desired consistency is reached, garnish with more parsley and a wedge of lemon!
