I recently posted on here mostly in the form of questions about duck, and if anyone had done it, or what was the general consensus.
I didn’t get a whole lot of response. The more videos I watched, the more intimidated I got. Having never cooked duck, and none of my family ever having even eaten duck, including me, I was still determined to try it, but I didn’t want to duck it up on my first go, and especially not go through an an elaborate process to find out that nobody liked it, even if I didn’t duck it up 😅.
So I decided to start with duck breasts rather than the whole bird. Slightly less work, and maybe easier not to ruin. It was a huge success, or at least a win for me. The family were trepadatious but willing to try. They declared it to be officially “bomb” in kidspeak. It was amazing and all leftovers disappeared early the next day. It was stupidly good. We cleared the first hurdle of duck being a delicious thing.
No intentions here OP to steal your duck thunder. Just want to share my duckcitement to the community at large. My first attempt was a great and very tasty success. I basically followed this recpe and approach, but I put the duck breasts on the pellet smoker for 45-60 mins before finishing in cast iron on the stove. It turned out lovely. I made the Chinese pancakes from scratch and plum sauce from scratch. It was my biggest hit of the last couple years truth be told.
Depending on where you live and local markets, duck breasts might not be that easy to find. They are not easy to find in my area, and I paid way more than I probably should have, at some fancy-pants farm to table boutique type store 2 towns over from where I live. But by that point I was on a mission. $110 CAD for 4 large duck breasts. (I know that was ridiculous.)
The results did not lie though! Absolutely duck was getting introduced into my culinary adventures, but NOT at those prices!!!
As it happend, by pure serendipity, I stopped at a discount type grocer to grab a couple things on my way home from work the very next day, and it was just past Christmas, and here they had a bin full of whole ducks for $2.88 / lb CAD. I grabbed 4 in the 6-7 lb range. I can’t wait to cook them up.
