One loaf classic, one blueberry + lemon zest
375 g warm filtered water
100 g active starter
500 g flour
2 tsp salt
Mix – let sit 30 min – start 4 sets of S&F
After 4th set – let BF on counter for 6 hrs
After 6 hours – shape – pop in fridge overnight
Preheat oven to 450° with DO inside also preheating
Bake 30 min lid on – 20 min lid off
note for the blueberry loaf I also added purple sweet potato powder in the first initial mix of the ingredients – and then I added the zest of 2 lemons on my 2nd S&F – blueberries when shaping
