I make my own and leave it out by the stove. I don’t like dealing with the oil hardening in the fridge plus the oil works as a barrier so I’m not worried about spoilage.

Oil goes rancid, so if you aren’t eating the product quickly enough, it may start tasting sour. Refrigeration will roughly double the shelf life.
