I slow cook skirt steak on the Egg. Love it.

Much better when you cut it like you did. Most just slice it off the end. Better to cut a hunk off and then slice that the other way. Good move. Makes a huge difference.

I cook it frequently on the egg. Love it with Chimichurri as a marinade. This is the recipe I use.

If you like skirt, try flap.
