Picked up a 2 pack of top sirloin caps from Costco for $57. Ended up with 9 steaks.
Dry brined for 4 hours beforehand. Cooked in a stainless steel pan at 450F and pulled around 120F-130F.
Extremely tender and imo tasted similar to a my strip, but with some of the beef flavor from a sirloin.

That’s awesome! I used to be able to find them locally at Walmart. Now they’re back to being pretty hard to find so I order from wild fork foods. It’s such an incredible cut!
Cost per pound, I think this is one of the best.

I finally found some at my local store but they cut them like half an inch thick… Definitely want to get my hands on a roast. Such a delicious cut
