Ingredients
– 2 large fennel bulbs, trimmed and chopped (reserve fronds for garnish)
– 1 medium leek, white and light green parts only, sliced
– 2 medium potatoes, peeled and diced
– 1 tbsp olive oil or unsalted butter
– 3 cups (720ml) vegetable or chicken stock
– 1 cup (240ml) heavy cream
– Salt and freshly ground black pepper to taste
– Olive oil or crème fraîche for finishing

Leeks, potatoes, pick your veg if at all, fennel is an excellent choice, don't burn it = guaranteed to be good 🙂 I have never had "creamed" fennel. I will make this, I know it's excellent. If you have a vitamix you could actually cook this soup in it if you took a mind. Big chunk of crusty pumpernickel and look out! Thanks Rik.

I am the only person in my family that likes fennel, so that leaves me with two options: 1. Don’t make this, or 2. The entire pot of soup is MINE! ALL MINE! Decisions, decisions…….lol

Never cooked with it Rik! But you say it has a mild flavour so I should try it. I have a huge list of your recipes to do that keeps getting longer, but I do make soup and I like how easy it is. ❤. By the way, I just made a one pan chicken meal with veg and mixed beans and used your herb mix for chicken. Just one teaspoon and it is delicious… ❤

If the fennel stalks are edible, I'd be tempted to use them and the potato skins to blend into a veg stock.

The real classics get by with just a few ingredients. A great soup for the smallest purse! Mine is a bit bigger and therefore I would add a small splash of "ouzo" at the end to underline the anise aroma. 👍

I don't have a hand blender. Would a regular stand blender work as well? Can the soup be a bit chunky?

I’ve never tasted fresh fennel before, as it can work out rather expensive here in the UK, & I’m never quite sure I’m going to like it. This soup however looks absolutely scrumptious, I may just be tempted to splash out & treat myself to a delicious pot of this soup over the festive period. Have been busy over the past couple of weeks, making a variety of different soups, last one was spiced butternut squash & sweet potato 😋, so my freezer is pretty much filled to capacity at the moment. But this is definitely going on my ‘must try’ list. I just love homemade soup, anytime of the year, but particularly on cold dark winter nights – internal central heating & comfort in a bowl 🥣, this one certainly looks decadent – a special treat!😍😋 Cheers Rik 👌👍👨🏼🍳

Love anything anise flavoured, so fennel is very good, but a bit difficult to find.I find here I need to go to the more upscale supermarkets for it. I also love fennel salad, dressed with good olive oil, and lemon, herbs of your choice, I think it’s best when you slice the fennel then soak in water in the fridge overnight before making the salad.😊
