This Middle Eastern recipe dates back hundreds of years and is one of our absolute family favs. The combination of rice and lentils gives you the perfect combination of amino acids to create the perfect protein your body needs. With just 3 simple ingredients plus S/P and cumin this dish can be enjoyed as is, on its own, or topped with a tomato and onions salad as well as a side of toum(garlic aioli). You’ll find hundreds of recipe variations on this meal however, this is the way my grandmother made it for our family and we truly love it!

Ingredients:

5 Large yellow onions chopped or sliced
2 cups brown lentils or green will work too
1 cup whole grain brown rice
1-2 tsp cumin depends on your liking
2-3 tsp salt
1-2 Tbsp olive oil

Instructions:

Bring 7 cups of water to a boil in a large pot
Slice or Dice 5 Large yellow onions
Heat 1-2 Tbsp of oil in a frying pan
Add onions to pan and let cook for 3-5 minutes before stirring and continue to stir throughout the cooking process until they are all dark brown and caramelized
Stir onions every 3-5 minutes
Add 1 tsp of salt to the fried onions once the have all turned brown
Keep frying onions until dark brown and are caramelized
Sort and rinse 2 cups of brown lentils
Add 2 cups of lentils to the boiling water – set a timer for 10min
Place cover on pot and bring up to a boil
Then turn heat down to a good simmer
Add 1 cup of rice to the simmering pot of lentils and place cover back on
Remove lid and give them a check for water levels every 8-10 min
Once You see no water in pot, remove lentils/rice from heat
Add salt and cumin to taste start with 1 tsp each
Once onions are caramelized add to the pot and mix in with rice and lentils.

This meal is now ready to enjoy! You can now top with a drizzle of olive oil or even a tomato and onion salad. If you have some toum or garlic aioli on hand, that is a great topper as well.
