Ingredients:
• 6 eggs
• Salt (to taste)
• 1 pickle, diced
• 1 avocado, diced
• 4 slices smoked turkey, diced
• 1 tbsp butter
• 1 tbsp pine nuts
• 1 tbsp slivered almonds
• Black pepper (to taste)
• 4 tbsp honey mustard
• 4 tbsp mayonnaise
• 4 slices of bread
• Cheese (your favorite kind)
Directions:
Step 1: Boil the Eggs
1. Place the eggs in a pot and cover with water until fully submerged.
2. Add a pinch of salt for flavor and to help peel the shells more easily.
3. Boil until fully cooked (about 10-12 minutes).
Step 2: Prep the Ingredients
1. While the eggs boil, dice the pickle, avocado, and smoked turkey.
2. Melt butter in a pan over medium heat.
3. Add the pine nuts and slivered almonds, grilling until golden brown. Remove and set aside.
4. In the same pan, grill the diced smoked turkey for about a minute.
Step 3: Assemble the Salad
1. Once the eggs are boiled, cool them, peel, and dice into small pieces.
2. In a large bowl, combine the diced eggs, pickle, avocado, smoked turkey, toasted nuts, and almonds.
3. Season with black pepper and salt to taste.
4. Add honey mustard and mayonnaise, then mix everything until creamy and well-coated.
Step 4: Toast the Bread
1. Spread a thin layer of butter on each slice of bread.
2. Grill the bread on a pan or griddle over medium heat until golden on both sides.
3. Add a slice of cheese to one side and let it melt slightly.
Step 5: Build the Sandwich
1. Generously spread the egg salad mixture onto the cheese-topped bread.
2. Garnish with any extra nuts, herbs, or even a sprinkle of chili flakes for an extra kick!
3. Close with the second slice of bread, slice, and serve immediately.
