BBQ Corn Salad

Ingredients

For the salad:
5 corn on the cob washed and dried
1 cups cherry tomato, quartered
1 large zucchini cut into circled slices
1 small red onion, chopped
1 cucumbers, chopped
1 sweet potato diced into cubes, boiled in salted water and cooled
¼ cup sun dried tomatoes, chopped
2 jalapeno peppers, chopped & seeds removed
2 tbsp pumpkin seeds
Extra virgin olive oil for coating

For the dressing:
3 tbsp ready made hummus
2 tsp lemon juice
1 tbsp extra virgin olive oil
1 tsp tabasco green pepper
½ tsp sumac
Salt and pepper to taste

Instructions
Heat the electric grill to the highest setting. Coat both the grill and the corn and zucchini with olive oil and grill the corn until it browns.
Using a knife, slice down the corn cobs to remove the kernels. Set aside.
In a large bowl combine all the salad ingredients.
Make the dressing by whisking together all the ingredients.
Toss the salad in the dressing until all is coated evenly.
