You’ve Never Had a Sandwich Like This Before

Sandwich Recipe:

Glazed Honey Soy Pork Tenderloin:
2lb Pork Tenderloin
1/4 Cup Honey (80g)
3 tbsp Neutral Oil (40g)
2 Tbsp Shaoxing Wine (30g)
2 Tbsp Light Soy Sauce (30g)
1 Tbsp Dark Soy Sauce (15g)
1 Tbsp Oyster Sauce (15g)
4 Cloves Fresh Garlic, minced (16g)
1 Tsp Ground Ginger
1 Tsp Black Pepper
1/4 Tsp MSG (2g)

Glaze:
2 Tbsp Honey (40g)
1 Tbsp Soy Sauce (15g)

1. Trim excess fat and silver skin from tenderloins
2. Add pork tenderloins to a large bowl along with the rest of the marinade ingredients.
3. Cover and refrigerate for 1-24 hours.
4. Remove from marinade and pat tenderloins dry.
5. Heat a pan to medium-high with 2 tbsp oil.
6. Add tenderloins and cook for 3-4 minutes each side, for a of total 20 minutes or until internal temp of 140*F
7. Remove from heat and rest for 5 minutes before cutting

Spicy Orange & Jalapeno Cranberry Relish:
12 oz Whole Cranberries (336g)
1 Large Orange, Juice & Zest
1/3 Cup Sugar (60g)
1-2 Jalapenos (15-30g)
1/2 Medium Red Onion (55g)
1/4 Cup Fresh Mint, Chopped (24g)
Pinch of Salt

1. Dice your red onion and jalapenos into equal small pieces.
2. Roughly chop your fresh mint.
3. Roughly chop your cranberries, then take half of the chopped cranberries and finely dice them.
4. In a large bowl combine all your chopped cranberries, red onion, jalapeno, fresh mint, sugar, juice from orange, zest from orange, and a tiny pinch of salt.

Lemon Herb Ricotta:
4 Tbsp Whole Milk Ricotta (75g)
1 Tbsp Fresh Mint, Chopped (5g)
1 Tsp Fresh Parsley, Chopped (2g)
2 Tsp Olive Oil (10g)
1-2 Tsp Honey (7-14g)
Zest of Half a Small Lemon (about 1/2 tsp)
Salt and Pepper to taste
