That is my style of meal prepping too. I often make a leftover portion before I even serve the meal to make sure I save some for a later date.
Do you do it for all left overs? If so, how do you mitigate some of the things with more water content from changing texture when reheating?
This is what I do too! I did longer full days of cooking before I had my baby, but now that he’s almost 2, I find it easiest to make larger batches of things and whatever is leftover that I don’t think I’ll use goes in the freezer.
I like cutting up veggies at once say thing of celery, some onions and carrots, and throw that in the freezer for a mirepoix blend that’s ready whenever. Saves time and labor on weeknight dinners, and I spend less money on premade frozen ingredients.
Also recently did it with a big pan of brownies and froze them in individual portions 10/10 recommend!
