    I always ask for medium with the expectation that it is going to be medium rare and am perfect happy with that. That looks like a delicious medium rare to me.

    For me, this is a perfectly rested medium rare.

    I do think some people would argue it’s closer to medium because, while the entire center is a vibrant pink, the very middle did not stay a deep ruby-red color. Am I wrong here?

    Medium rare and very nicely cooked. Great job! However your mash looks very sad. needs more butter and look into using a ricer to make it smooth.
