Love to see the Parmo here boys but sadly can't commend the execution, less cheddar in the sauce, sauce needs to be thicker and chilled before going on and needs way more cheddar / red leicester on top (double gloucester goes nice as well) – a proper parmo is at least B tier on this list if done well. Can I come and cook you one?

    Apologies for not giving thumbs up to one of my favourite channels 5 days ago. Just started a new HGV job today which hasn't sunk in yet as very little work past 5 months. I am very grateful to them. Life is strange at times when you leave a comfortable job not happy and take a chance that you can find something more challenging but yet more fulfilling. I expect it must be the same in your profession.

  8. Parmo is with bechamel sauce not cheese sauce. You butchered it, make it properly and rescore. It's the best in Britain.

  10. I love classic recipes and the history of them. I found a Women's Institute book in a charity shop which is loaded with fermentation, pickle and preservation recipes. I think it's from the late 20's.
    My favourite was Mock Port, which is fermented beetroot juice that you load with brandy. It's a great reference for more out there ways of using food because of circumstance and where you could take them to with modern techniques.

  11. Nice guys. A couple of things, though. Fish & Chips is allegedly Portugese in origin, I read about it last year. Rarebit usually has English Mustard in it, its supposed to have a bit of a kick in it that just Worcs Sauce doesn't provide. Also, just to provide balance, I'm not a Sunday Roast fan! My wife loves it, so I have one occasionally to please her. My reason for the dislike is smelling soo many being cooked whilst I was working delivering Corona pop to clients' homes in the Cynon Valley (where I originate) in my late teens/early 20s.
    That aside, an interesting delve into culinay history.

  13. The boys are already a British institution to be proud of. Also mostly agree with the scoring apart from one, Fish and Chips. I am sorry, but no true Brit can score F&C any less than perfect. It would be my final meal. Being honest, the only reason to drop its score is when ‘fancy’ restaurants try and make it too ‘cheffy’ which is exactly what they did by serving it with triple cooked chips, which is bordering on illegal😂.No respectful Brit would ever consider triple cooked chips with fried fish, unless you have some sort of crunch fetish and a jaw made by Ironman. Next time, cook the chips once, and to be more authentic, wrap both fish and chips in paper for 10 mins to let it all steam, turning the chips slightly more soggy. Now that’s a proper British classic Fish and Chips, and not a Michelin star it sight, thank goodness 😅.

  14. My Nan made the best liquor (for pie and mash) jellied eels with vinegar salt pepper is fab, BUT never hot with the liquor 🤢 my dad loved that 🤮

  16. That is definitely NOT pie n mash. Your licquor is all wrong. Go to a real pie n mash shop and try the real thing.
