🌿 Pan-seared Iberico Pork Racks with Apple, Walnut, Cranberry & Rocket Salad 🐖

Ingredients for pork: x1 Iberico Pork Rack, 100g Butter, 2 sprigs thyme, 1 small bunch sage and half the head of garlic.

Ingredients for the salad: x1 large bag of rocket leaves, x2 granny smith apples, 150g roast walnuts, chopped, 150g dried cranberries, chopped, 25ml Sherry vinegar, 50ml extra virgin olive oil, Salt and pepper, 10g Dijon mustard, 10g honey.

👩‍🍳 Method:
1. Season and sear the Iberico Pork Rack, basting it in thyme, sage, and garlic goodness.
2. Roast to perfection at 180°C, reaching a succulent 58°C.
3. Let it rest, allowing the flavors to meld.
4. Meanwhile, whip up a zesty vinaigrette using sherry vinegar, olive oil, dijon, and honey.
5. Toss rocket leaves, granny smith apples, roast walnuts, and dried cranberries in the vinaigrette.
6. Slice the pan-seared pork at the last minute and serve alongside the vibrant salad.
