started my own starter just over 2 weeks ago and it has been consistently doubling in size after about 4-6 hours for the last few days so I gave my first loaf a go!
150g active starter
350g filtered water
500g unbleached AP flour
10g salt
mixed all into a shaggy dough, let rest for an hour
3 sets of stretch and folds with about 30-45 minutes in between each set
let bulk ferment overnight (about 8 1/2 hrs), had doubled by morning!
shaped with some push and pulls, let refrigerate while i was at work (~9 hours) and straight into the oven!
450 for 20 minutes with lid on, 25 minutes with lid off
let cool for a few hours, cut into that boi and even though it’s not perfect, i’m proud of this attempt and tbh it tastes pretty great!
i’ve followed a lot of advice on this sub especially for my starter, and i appreciate everyone who shares! i’m excited to be a part of the SD gang

Congratulations on the bread!
Thanks

That’s great for a first loaf!
Omg good job
I am envious of your beginners luck. I use the same proportions as you except 100g of starter and I’ve been struggling with under-proofing. Maybe I’ll increase to 150g like you did and maybe, my luck will turn. Great job – beautiful loaf!
