    Has anyone tried to remove skin first to not have mushy skin and help smoke penetrate better?

    How long you smoke em for? I tried once and I think I went too long because the feedback was they were too Smokey. I now know poultry can really take on that smoke flavor quickly so lesson learned

    I have a Komado smoker
    I get enough smoke from the jealous devil charcoal I don’t add wood when doing poultry
    Also I used to use KJ big lump which was great but had a shitty taste. I appreciate it’s a way different game on different smokers

  8. Only way I’ve found to get the skin right on smoked wings is to add baking powder to the seasoning, and then cranking the heat at the end. I’ve also smoked and then fried but I find that to be a bit too much work.
