  3. As someone who loves fish, but does not eat meat I hate that some of the dishes have Wagyu in it.

  4. I don’t think I’ve ever seen Triggerfish on a menu before, Sushi or otherwise. I’ve seen parrotfish in Okinawa, but this is new. Do let us know what it looks like / how it tastes.

    Looks great, some rare things on there, but I’ve never been a fan of topping other seafood with uni. It’s a strong flavor to add to something like scallop.
