Ingredients:
Portuguese Kale Soup(Caldo Verde):
1 large onion
2–3 cloves garlic
Extra-virgin olive oil
700 g starchy potatoes
1.5L water or chicken/vegetable broth
125g of kale (or Portuguese couve galega)
½ Chorizo
1 Tbsp White Soy sauce
Salt and white pepper, to taste
Portuguese Corn Bread(Broa de Milho):
300 g – Cornflour (Yellow)
375 ml Boiling Water
125 g Rye flour
125 g All-purpose flour
7 g – Salt (approximately 1¼ teaspoons)
7 g – Yeast (active dry or instant)
125 ml – Water (lukewarm for yeast mixture)

Adding this soup to my recipe collection for Autumn/Winter. The only change I'd make is to omit that second large drizzle of olive oil, but put the oil on the table so people can add as they like.

I think my simplest soup that I enjoy is a Broccoli and Fennel soup (onion, garlic, veg stock), similar to this soup you use a stick blender to smoothen, a little sour cream on the table so that those that want can can add a drizzle.
