I didn’t want to make the shingled potatoes because a) didn’t want to cut them into slivers b) I’m not a fan of oven roasted potatoes.
Instead, I diced and boiled the potatoes and mashed them. I used the sour cream that was for the scallion crema for the mashed potatoes and added a tablespoon of butter and salted with garlic salt. I also cooked in chicken stock (as always) and used a bit of the leftover liquid in the mashed potatoes.
