




This was my first attempt at ever baking anything sweet, I’ve done breads before. I don’t usually eat sweets at all, but I just wanted a danish. A month later, I’ve made about a dozen batches of danishes, gave them away as Christmas presents. People started asking me if they could buy them! I’ve sold 3 dozen so far and just love that I found a new hobby that could potentially support itself financially. I’m sort of obsessed. Just wanted to share.

I did the same! It’ll be 8 years this summer. My sweet tooth went from 0 to 60 afterwards. Lean into it, lots a fun new to stuff to try out. Congratulations!

Don’t worry liver, I may have quit drinking, but I WILL find a way to keep you fully supplied with fermented sugars.

Here is the recipe:
128g milk (warm)
1 packet instant yeast (red star premium) 7g?
390g AP flour
66g sugar
5g salt
128g cold milk
1 egg
226g butter grated
I grate the butter and put in in the freezer
Add yeast to the warm milk
Get my dry ingredients together
Cut those into the frozen butter
Add the wet stuff (egg, milk, and yeast milk)
Stir until it forms a dough, refrigerate for a while (when I go to work)
Roll and fold the dough (a bunch of times)
Refrigerate again (as I sleep)
Roll the dough and cut the squares
Fill with delicious jams (I use the fancy French ones) and a cream cheese mixture
Let them proof a bit
Egg wash
Bake at 375 for roughly 20 minutes (8 minutes, rotate 8 minutes again, and a little more for the golden brownness I want.
Add the crumble (sugar, flour butter)
Let them cool
Add the icing (powdered sugar, milk)

That’s amazing! I quit drinking about two and a half years ago. I was just going to do a dry month to try it out, but during that month I learned about all the actual dangers of alcohol consumption that our society ignores and now I don’t ever want to go back.
