




Mostly Gordon Ramsay recipe, couple of tweaks. Probably the best meal I’ve ever made. Simply perfect.
Beef wellington – puff pastry, chive crepe, prosciutto, chestnut mushroom duxelle with brandy and chestnuts (because Christmas), beef centre fillet, mustard
Potato – Maris piper (riced), cream, butter
Roasted chantenay carrot
Red wine gravy – 1 1/4 litre beef stock (from scratch with bones), bottle Cabernet Sauvignon, 500g beef trimmings, 100ml port, leek, shallot, garlic, carrot. Reduced to 300mm sauce.
