Cooked stirred fried rice for the wife and kids tonight. Opinions?

    That actually looks so good I wanna eat fried rice with egg tomorrow. Bit heavy on the white onion for my taste, I’d make it with spring onion, carrot and sugar snap peas or green peas, but otherwise totally smashable.

  3. This is why I always keep frozen peas and carrots on hand.

    Edit: any frozen vegetable can work in a pinch

    You need to use day-old rice, right out of the fridge, for starters. It’s a whole thing that I don’t want to type out, but it’s pretty crucial for the right texture and all that.

    Heat is your friend; your best bet is a carbon steel wok and burner. I hit mine with like 50k btu sometimes.

    Look up some videos on YouTube by “uncle Roger” for how to cook fried rice. I learned that way, and once you get the feel, it’s super easy and tastes incredible.
