We had a big roast that I thawed a little earlier than I should have (thawed by Monday). My plan was always to cut it up into steaks, so I cut it up Monday night and my plan is to cook them Sunday, but I’m seeing some discoloration. Do you all think they’re ok? I’m not smelling anything bad from them and they seem pretty dry.

    Little salt can help preserve the Meat while refrigerating. Looking at the oxidation and or color, if a fly lands on the meat that’s actually a good side means it passes the flys smell test.

    As previously mentioned go by smell. Most stores add color to make beef look more appealing. I often pick up a ribeye and find they put the sticker over the dark spot

    Smell it then tell your wife to smell it, then get your kids to smell it. If you don’t have any, go next door and ask the neighbor to smell it. If he says no then you’re gtg.

    If he says yes and smells it then you need to throw it away because you just let a stranger stick their nose in your food!

    The discoloration happens from the iron in the steak being exposed to oxygen, which naturally makes it turn gray. If you keep it in safe temperatures, then is should be fine
