Just in time for healthy eating in 2025, it’s our favorite
Strawberry Spinach Salad.
So yummy!
Dressing:
1/3 cup Olive Oil (we used Avacado oil)
1/4 cup lemon juice
3 Tbsp. Honey
1 Tbsp. Apple Cider Vinegar
1 Tbsp. Poppy Seeds
2 tsp. Dijon Mustard
1/2 tsp. Salt
1/4 tsp. Black Pepper
10 oz. pkg. Baby Spinach
1 lb. Strawberries (sliced)
2 small Oranges (peeled and sliced)
1 1/2 cup Pecans (chopped)
4 oz. Goat Cheese crumbles (we used Feta)
In a small jar, combine the dressing ingredients. Seal the jar and shake to combine. Set aside.
Just before serving, add the spinach to a large bowl along with your other salad fixin’s. If desired, add dressing to the entire salad and toss to coat well. We wanted to serve the dressing on the side, not knowing how Tink would like it. Turns out, he loved it as much as we do so it’s a WIN! Enjoy!Cooking is Music to the Soul!
