My local butcher does free dry aging service if you buy the whole primal/portion. Bought a whole 8kg primal for $15/kg. Post trim weighed around 4kg

    One of my most memorable steaks was years ago when I was in the military (US) and was in Australia training with the Australian Army. We were in the bush for months and during the last few days they had a BBQ for us and grilled fresh Australian beef over an open pit fire. Not having good food for a while probably made it taste better but it was amazing. Any time I see Australian beef it makes me think about that

    That holds true for a lot of produce here though.

    At my supermarket in deep western Maine last year they had Australian grass fed NY strip on sale for a week. That shit was marbled like crazy and 9.99$ a lb
