First time using 75/25 Beef (instead of 80/20), it’s the best burger I’ve ever made. .

    Brisket burgers are super fatty. Maybe 70-30. Costco sells one by meat district that is like chuck, short rib, and brisket, and it’s so juicy.

    I think I did a 70/30 burger on a grill in college, and it was impossible to take off the grill because it was just mush……. Make sure you use a flat top, lol!!

    That’s not an easy percentage to find. I’ve never seen anything under 80 percent where I live.

    If you are doing experiments, try using butter for that remaining 5%. You need to freeze the butter before grinding.

  8. Yup. The Flavor is in the FAT. I cannot stand “low fat” burger now, after seeing and tasting the difference.
