    You said it’s going to be 100°, do these plants get intense sunlight all day? If so you’re definitely going to need some shade cloth for the afternoon sun.

    you might be cooking the roots, those small black pots can get very hot especially in the evening and if you have them elevated they can catch even more light making the problem worse. find a way to keep the sun off the pots and a bit of seaweed liquid for the super hot days will help with the stress

    From the white dots in the soil I assume you potting soil contains vermiculite. That is suppose to absorb water and keep the soil moist for longer. It might make it easier for you to over water your plant. Go by weight before you decide to add more water.

    Some varieties and even individual plants within the same variety just respond to extreme heat and sun differently.

    I’ve had this happen and have found that a shade cloth, or in your case since they are in pots, moving them into the shade during the hottest parts of the day, works really well.

    Peppers don’t really like constant, intense afternoon sun. Let them go full sun in the morning and evening if possible.

    As they get bigger you might want to invest in fabric pots.
