It's been a month since my dad passed away. Every time he came down he would tell me “I need a loaf, but don't do anything different.” I loved to experiment and tweak my recipe, he just loved fresh sourdough bread.

It was extremely difficult to find the motivation this past month to even feed my starter. Friday my nephew asked for a loaf and I knew I would have to find the energy to make him one. While not the best loaves I've made there's some peace in the process and a sense of connection after my loss.

Recipe:

150g starter
900g KA Bread flour
100g Bob’s Redmill whole wheat
750g water
18g salt

Mix all ingredients (except salt) and rest for 30 mins
Add salt and begin stretch and folds (2x 30 mins apart)
Three coil folds
BF for 6 hours
Cold ferment 16 hours
Bake in a Dutch oven @450 (25 mins lid on / 25 mins lid off)

    I am sorry for your loss. My friend’s mom just passed last night and my first thought was “man, I wish I could bring her some bread” (she lives across the country). Baking and sharing can be so healing. Thinking of you during your grieving process 💓💓
