    Uhhh so I don’t know what the hell you guys actually did, but at my restaurant to break down the flat top every night we throw a sheet pan on the grill for the last hour to hour and a half. Literally never seen this happen, I’m guessing y’all had some leftover oil on the tray because it wasn’t cleaned right

    You probably had a grill that hadn’t been deep-cleaned for awhile, or hadn’t been intermittently scrubbed between items for a bit? 

    Not judging; I used to put a sheet pan over the grill to help clean it easily. It helps get the bars white hot, then when you scrub them everything just sloughs off. Don’t forget to empty your catch tray.

    Putting a pan on it is also a great way to get it up to temperature more quickly (for those times where you, “Oh shit!- forgot to turn on the grill!”

    We put sheet pans over our grills to help clean them

    I like how everyone is blasé about this. Any other industry and people would be losing their shit. This indicates either 1) dead inside or 2) they’ve seen some shit already.

    Used to throw a sheet pan on top of the broiler and crank dat soldier boy to burn off all the grease. Works great until it doesn’t
