Definitely some good learns – need to use a bigger charcoal basket, cook the ribs longer – flavour was very good but texture could’ve been more tender – excited for a second go!

    Next time try the snake method, it’ll hold 250-300 pretty well depending on the type of charcoal as well. Though it seems cold where you are, YMMV
