

I made this to take to non-keto barbeque and it was demolished
1 cup cottage cheese
1/2 cup coconut flour
2 eggs
1/2 tsp baking powder
Pinch of salt
2 Tbsp sweetener or to taste
1 tsp Vanilla extract
1/4 tsp xanthan gum (not reqd but helps the texture)
Process all ingredients until mixture thickens. It'll be a firm paste. Press into a lined or silicon pie plate. Bake at 180 for about 12 mins or until golden. Cover the base with your choice of fruit.
Glaze
1 sachet lite jelly
1 tbsp gelatine
Add the gelatin to the sachet mix and make up as per packet instructions (you'll have a lot leftover). Spoon the glaze over the fruit until completely covered. Refrigerate until set.
