    Nice. Salt and pepper only would make a less burnt crust. Those seasonings burned. It still looks good though

    The crust is mostly burned seasonings and less a Maillard reaction. If that’s what you want then it’s great.

    Just focus on pushing it more in the middle when searing. I find pressing down while keeping contact in the middle with tongs works well.

    as a someone very new to this it looks delicious. question for you. every time i try to get a nice crust it reaches the insides more than i want it to. how do i avoid that?
