Chicken Souvlaki
3 Chicken Thighs bone in and skin on (can use boneless/skinless if preferred)
 Greek style pita bread
 Olive Oil to brush on the bread
 1 Roma Tomato diced
 1/4 Red Onion diced
 Romaine Lettuce
Chicken Marinade:
 1/2c Greek Yogurt
 1/2 – 1tbsp Lemon Juice
 1/4tsp Salt
 1/2tsp Oregano dried
 1/2tsp Rosemary dried
 1/4tsp Paprika
 1 Garlic Clove minced
Tzatziki:
 5 – 6inch piece English Cucumber grated
 1/2c Greek Yogurt
 1 – 2 Garlic Cloves minced
 Pinch of Salt
 1tsp Dried Dill
 1/2tbsp Lemon Juice
Remove the bone from the thigh
 Trim off any excess skin and slice each thigh into two long pieces
 Marinade:
 In a bowl combine the yogurt and enough lemon juice to make a smooth thick cream
 Add the seasonings and garlic and mix until combined
 Add the chicken and coat it well with the yogurt mixture
 Cover and refrigerate at least 2 hours or overnight
 Tzatziki:
 Place the grated cucumber in cheesecloth and squeeze out as much water as you can
 In a small bowl combine the yogurt, cucumber, minced garlic, salt, dill and lemon juice
 Cover and refrigerate until needed
 Grill:
 Soak wooden skewers for 2 hours
 Thread the chicken on the skewers and grill until cooked thru keeping the marinade on the chicken
 Assemble:
 Brush the pitas with olive oil and warm in a skillet or under the broiler
 Place a piece of lettuce on the pita
 Slide the chicken off of a skewer onto the lettuce
 Top with a spoon of the tzatziki, some tomato and onion
 Roll the pita around the filling – can wrap with parchment paper, waxed paper or foil if desired
