Crispy and Tender Chicken Nuggets 🍗

Sharing a quick and easy chicken nugget recipe that is relatively healthier and higher in protein compared to what you get when eating out! These use chicken breasts and are made right in the air fryer. I also make a sweet and tangy honey mustard sauce, but you can use any sauce you’d like! These are perfect for a weeknight dinner or meal prep that everyone will enjoy!

Ingredients:
-1 lb chicken breasts, cut into 1-inch cubes
-2 cups panko breadcrumbs
-2 large garlic cloves, minced
-2 tbs reduced fat light butter
-2 tbs Dijon mustard
-2 tbs regular (or a mix of hot and regular) honey
-2 tbs olive oil
-2 tsp onion powder
-2 tsp garlic powder
-2 tsp smoked paprika
-1 tsp salt
-1 tsp pepper
-spray oil

Instructions:
-add the cubed chicken into a large bowl with olive oil, salt, pepper, onion and garlic powder, and smoked paprika; mix well
-thoroughly coat each piece of chicken in breadcrumbs and lightly shake off any excess
-place the chicken in the air fryer, spray with oil, and air fry at 400F for 12-15 minutes until internal temp is 165F; rest for 5 minutes
-heat a small saucepan on medium heat
-melt 2 tbs of butter and lightly toast the garlic for 30 seconds
-add in dijon mustard and honey, whisking well until sauce is smooth
-allow the sauce to rest for 10 minutes
-gently toss the chicken with the sauce or serve the sauce on the side
