Ingredients for Börek Soup Dough:
– 500g ground beef
– 2 onions
– 1/2 tea glass olive oil
– 1 teaspoon salt
– 1 teaspoon black pepper
– 4 cups flour
– 1.5 cups water (add water gradually, increase the amount if needed, I added it by eye)
Ingredients for Soup:
– About 2 liters of water (I used meat broth)
– A bowl of cooked chickpeas
– 1/2 teaspoon salt
– 1 tablespoon rice
– 1 plate of prepared and dried börek pieces
Ingredients for Yogurt Sauce:
– 2 cups strained yogurt
– 1 egg
– 1/2 cup milk
Instructions:
1. Cook the ground beef with olive oil, and add salt. Then, add the finely chopped onions and cook together. Add the black pepper.
2. Let the beef cool down, then add the flour and water. Knead the dough until it’s smooth and no longer sticky. Add more water if necessary.
3. Roll the dough into thin strips and cut them into small pieces with a knife.
4. Line a baking tray with parchment paper and place the börek pieces on it, leaving space between them.
5. Dry them in a preheated oven on the lowest setting.
If you have time, you can place the dough on a clean kitchen cloth and let them dry for 1-2 days. This way, the taste will be better. Once dried, store some in the freezer.
For the Soup:
1. Boil the meat broth and add a spoonful of rice.
2. Add the dough you made for the pastry into the water and cook for 15 minutes.
3. Add cooked chickpeas and continue cooking.
For the Yogurt sauce :
1. To room temperature strained yogurt, add an egg and whisk quickly. My friend cooks the yogurt with the egg on the stove, stirring it, then adds some of the soup from the pot to prepare the yogurt mixture, and I did it exactly like that. But if you prefer, without cooking the yogurt, you can turn off the soup heat 2 minutes before it’s done, take 3-4 ladles of soup, mix it with the yogurt, and then slowly add the yogurt mixture to the soup. Stir a few times, let it boil for 1-2 minutes, and then turn off the heat.
2. For the sauce, heat some olive oil in a pan, add 2 teaspoons of mint, and drizzle it over the soup when serving.

Börek Çorbası Hamuru İçin Malzemeler:
500 gr kıyma
2 kuru soğan
1 tatlı kaşığı tuz
1 tatlı kaşığı karabiber
4 bardak un
1 buçuk su bardağı su
Çorba İçin Malzemeler:
– Yaklaşık 2 litre su (et suyu daha güzel olur )
– Yarım su bardağı nohut
– Yarım tatlı kaşığı tuz
– 1 yk prinç
– 1 tabak hazırladığımız kuruttuğumuz börekten
Yoğurt İçin Malzemeler:
– 2 su bardağı süzme yoğurt
– 1 yumurta
– 1/2 su bardağı süt
Yapılışı:
1. Kıymayı 5 dakika yüksek ateşte, tuzunu ekleyerek kavurun. Ardından yemeklik doğranmış soğanı ekleyip birlikte kavurun. Karabiberini de ekleyin.
2. Kıymanın soğumasını bekleyin, ardından ununu ve suyunu ekleyin. Hamuru yoğurun, ele yapışmayan bir kıvam elde edin. Gerekirse su ekleyin.
3. Hamuru ince şeritler halinde açıp, bıçakla minik minik kesin.
4. Fırın tepsisine yağlı kağıt serin ve börekleri aralıklarla yerleştirin.
5. Önceden ısıtılmış en düşük ayar fırında kurutun.
Zamanınız varsa temiz bir örtü üzerine hamurları koyup 1-2 gün kurutabilirsiniz. Böyle daha lezzetli olur.
Çorba İçin:
1. Et suyunu kaynatın içine bir kaşık prinç ekleyin.
2. Yaptığınız börek hamurundan suya ekleyin ve 15 dakika pişirin.
3. Haşlanmış nohut ekleyin ve pişirmeye devam edin .
Yoğurt İçin:
1. Oda sıcaklığındaki süzme yoğurda yumurta, ekleyip hızlıca çırpın. Arkadaşım ocakta yoğurtlu yumurtayı karıştırark pişirip sonra tenceredeki sudan ekleyerek terbiyesini hazırlıyor, ben de aynen öyle yaptım. Ama isterseniz yoğurdu pişirmeden çorbanın altını kapatmadan 2 dakika önce, 3-4 kepçe çorbadan alıp yoğurtla karıştırın. Sonrasında yoğurdu yavaşça çorbaya ekleyin, birkaç kere karıştırıp 1-2 dakika kaynamasını bekleyin ve ocağı kapatın.
2. Sos için biraz zeytinyağı tava ile ocağa alın , üzerine 2 tatlı kaşığı nane ekleyin ve çorbaya sunum anında gezdirin.

That's a really interesting way to incorporate meat into a dish, it kind of makes me think the person who came up with it was either very poor or very extravagant. Both cases seem to breed a certain type of culinary eccentricity, which is why I assume so.
