Hello! I have recently started my health journey and was looking at different recipes that can keep me within my calorie decifit. I downloaded this app and either I am completely wrong, or this is food I made is actually 250cal per pepper. Like I said, I am still relatively new to this so I would just like to see if anyone has any advice or if the macros look good? Any recommendations for how to make this better?

I used 96/4 ground beef, no oil to cook it, just some minched garlic and spices and added an 8oz can of tomato sauce. I put the smallest amount of cheese just to make me feel better about it. I used one of the Minute Rice cups and almost a whole pack of spinach with arugula which weighed 150g. I know some people add cheese to the top once the pepper is stuffed, I just didnt have any melty cheese on hand.

Still 28g of protein just seems like a little to me, just wanted to see if I was crazy or if others thought the same.

    What spices did you use? The meat looks a bit grey and bland, otherwise it looks stunning!

    I use ground turkey, panko, 1 egg, rice, fresh basil and tomato sauce to bind filling together.

    Mushrooms, corn, sauteed diced carrots or butternut squash, a can of fire roasted or Rotel will add a bit more flavor here.

    I would do a curry rendition. Half cauliflower rice/ half regular rice. Add butternut squash, lime, cilantro or basil, little bit of coconut milk to add in the water you cook the rice in, meat is good, carrot, onion, garlic, s+p, jalapeno (I like spice), broccoli or kale, ginger powder, gram masala, curry powder, chilli powder. Whatevs

  5. Love a good stuffed pepper, these look legit, I would just add some crushed tomato or tomato sauce to keep it moist and a vote for a lil’ mozzarella or parm on top next time if you have it.

    Use cumin, paprika, oregano, salt/pepper, chili powder in your meat while cooking. Switch to ground turkey. I might be missing a spice or two. I think there was onion/garlic powder, too? Going off memory.

    Mix it with your meat while cooking–tastes like Mexican-ish food.

    Then just do like a cup of white jasmine rice, use 1 and 1/4 cup of water. Throw in like 4 bay leaves while it cooks. Bring to boil, turn to low and cook until fluffy. A little oil before cooking.

    When it’s done, a tiny salt, squeeze 4 limes and 1 lemon and cut up a bunch of cilantro and mix it with rice. Add a tiny oil. Should be some yummy cilantro lime rice.

    Maybe have fresh pico on top?

    Air fry some onion/green & red peppers that’s sliced and throw it on top for even more peppers. 😀

    Maybe toss a can of drained black beans in the mix? Use same seasonings as turkey to keep the Mexican-flavor profile.

    I agree with the paprika, cumin, chili powder. Basically taco seasoning. Soooo yummy

    If you’re just looking for more protein, you could try substituting the rice for farro! It’s similar in calories and has more fiber and protein; the cooking time is different so you may have to adjust for that but it might be an easy way to sneak some extra protein in. The texture might be a little different but it’s got kind of a nutty flavor that I’ve never tried in a stuffed pepper but now I kind of want to 😋

  13. Like a lot of the suggestion, specifically black beans for your added protein, and rotel or fire roasted tomatoes. You could also pretty seamlessly add egg whites if you’re trying to boost protein.

    I didn’t see anyone say green chile’s though. I’d throw a can of hatch green chile’s in to give it some heat and depth. Also, boost your unsaturated fat content with some avocado on top.
