My aunty is a vegetarian, so for each Christmas I make her this pie. Recipe:
1 large block of Red Leicester 400g grated, 1/3 of a jar of beetroot sliced, 1 red onion sliced and 1 white onion diced, some french mustard to go in the mix and base the pastry, dollop of mayo to help bind the mixture. Shortcut pastry for the base and puff pastry for the lid. Egg yolk to bind the lid and cover. Pastry leaves for decoration. Gas mark 5 for 40 mins.
